Cauliflower can be used as a replacement for rice or bread crust while zucchini can be used as a replacement for pasta dishes.

While these vegetables contain more carbohydrates than leafy vegetables like spinach and lettuce, they still contain enough carbohydrates to remain within a low carbohydrate diet. Certain vegetables should be avoided by individuals who wish to maintain ketosis. Vegetables that are high in starch, such as potatoes, corn, and peas, should be avoided.
